I decided to test myself for rice paddy and double test mill and plantation.My values came out different for them.
Maybe someone can double check.
Here are all the values in case anyone is curious:
Mill : .5583333 per sec
Plantation : .3833333 per sec
Rice paddy (food) : 0.5 per sec
Rice paddy (coin) : .291666 per sec
Note:The values may differ slightly because game doesn't show decimal points.
Also,my values for mine,tree,huntable came out same as that guy.

Walking time when inside the mill or walk to the mill?

No,I didn't account for that.I thought they gathered even when its walking animation.

So really, @Gendarme, these are from tests, so they include (I would say "account for") the walking time.

According to the game files, rates are:
Mill: 0.67 food/sec
Plantation: 0.5 coin/sec
Rice paddy food: 0.5 food/sec
Rice paddy coin: 0.34 coin/sec

Since there's no walking on rice paddies, 0.5 food/sec and 0.34 coin/sec should be correct -- I would say tests were off a bit. My understanding is that mill and plantation actually depend on how many villagers are assigned to each, as villagers bumping into each other while walking around further drop the rates, and have heard the optimal rates are at 7 villagers per mill, and I assume plantation is the same.

The optimal rate is 1 villager per mill. :P But in reality, 7 villagers per mill is mostly used in treaty games, where you have a lot of time, so it pays itself back. In a normal supremacy game, 10 villagers on a mill/plantation is almost always the best option, because it takes very long to get back the 800 wood you spent.

Also, in treaty games, if you make more mills/plantations, you get more xp for shipments, meaning you can send all eco shipments earlier, giving you even more resources.
