You learn what works and what doesnt, you learn better micro or if you try new stuff out you learn if what the best way is to deal with something. Its harder to learn from a win, because if you lose you surely did do something wrong, but if you win you arent sure if what you did was correct since your opponent might have done something wrong.

You know how to exploit their mistake and you know that you shouldn't make the mistakes they did. Also if the game is close you still know where you could have improved and what went wrong. Only because at the end of the game there it says "win" doesn't mean you did everything perfectly and you know it, maybe not card order wise but macro micro and decision making wise (grab map control earlier, tower not needed since enemy too busy etc...)
