Re: so how to win japan?
I moved your topic from general to strategy, since you are clearly asking for a strategy. Perhaps you can edit your title to something a bit more specific, like: "How to win Japan as Aztec?".

kill them early, train 5 maces 1st and ship 10 maces, block walls with explorer and idle them as much as possible. You should be at their base before they build their 1st unit production building.

Rush rush rush, dont lose time.
If you ever see yourself in a game against jap, check game time, if its above 10mins, resign.

As Aztec, rush ASAP or if you're on the water you may have a shot at winning if you can control the water.
Hardest matchup for Japan IMO is India, since they get such a strong early rush.
Crazy idea: Rush as India, ship British spies to kill Japan's monks.

Actually not too far fetched--aiz builds church to train spies vs japs.
But actually, since Aiz does it is it far fetched?
