Potatoe skin have that crispy outside and tender inside with the goo of melted cheese somewhere in between. It's perfect texturally and a nice balance of substance and flavor.
Mac and cheese is tasteless and slimy. The noodles have no real weight to them and their thin, hollow bodies allow for an uninteresting eating experience. To be frank I never understood how the dish became so popular by itself, especially the offensive kraft instant products. If we talk about using quality mac and cheese as an instrument to enhance a food, for instance, putting mac and cheese on a hot dog or substituting it onto a grilled cheese, then that has merit.
