Most of the languages don't make any sense. If you've ever read anything original copy from Charles Dickens then that's how English would look like in this time period. The Aztecs take the cherry on the cake: their language doesn't even exist. Aztec units speak an unknown variant of Nahuatl. It seems probable that the developers just took bits of Nahuatl they could find without verifying the source or time period.

Gotta say, the Dutch isn't old Dutch but it's essentially perfectly spoken Dutch. I like to think I speak perfect Dutch, but those voice actors give me a run for my money. Given that many movies/series, even of high caliber, struggle to properly represent the Netherlands and the Dutch language, I'm pretty impressed by this. They didn't hire random Dutch people to do the lines, they probably hired actual high quality voice actors for it.

Btw my favorite explorer quote may be "Obrigado por teres pago o resgate" by the Portuguese explorer. He speaks so fast that I hear "Obrigad purteshpar gurshgat!" with my non-Portuguese ears and he sounds so enthusiastic I always smile
