For teamgames (e.g. classic 3v3) it makes most sense to build one unit only. You will have less problems with micro and can fully devote on harvesting the ressources needed for this one unit. When playing Germany, the logical conclusion is to focus on Uhlans, since you get free ones anyway, can mass them easily, can harvest the most important ressource very close to your TC and the unit itself is quite good as well.

In 3v3's it also may happen that there is not substantial fights early on. In this case, you can still use your Uhlans for raids or just keep them. They will still be viable in age V, while xbows will not.

But you see Germans sometimes eat their whole starting mines without even aging to three just making batch after batch especially in team

Germany wants to get to age 3, and uhlans are the only age 2 unit that will also be useful in age 3.

They're a great raiding unit and raiding is really important in team games, so there's that. Also, they don't become useless when you hit age 3 like xbow/pike does.
