It's "Vinyanyérë". The umlaut in Quenya doesn't indicate a special pronunciation, it just indicates that the letter should be pronounced as a separate syllable. For example, "Feanor" would be pronounced "Fay - nor" or perhaps "Fee - nor", but "Fëanor" would be pronounced "Feh - a - nor". Similarly, "Manwe" would be pronounced "Mahn" but "Manwë" is pronounced "Mahn weh". "nyëre" or "nyëré", as a result, don't make sense. You couldn't not pronounce the middle "e" in that word: "nyëré" and "nyeré" have no difference in pronunciation and so the latter is preferable.
